ALBINITA (prajitura din foi cu miere) - Gabi

Ingredients needed:

Aluatul:
- 800 gr. de faina (5 3/4 cups flour)
- 4 linguri de miere (4 tbsp. honey)
- 300 gr. zahar (1 1/2 cups sugar)
- 100 gr. unt (7 tbsp. butter)
- 100 ml. lapte
- 2 oua (2 eggs)
- 2 lingurite amoniac (2 tsp. baking amonia)
- 1/4 tsp. salt

Pudding:
- 8 tbsp. flour
- 700 ml. lapte
- 1 vanilla pie filling
- 150 gr. zahar (3/4 cups sugar)
- 4 envelopes of vanilla sugar
- 1/4 tsp. salt

Cream:
- 4 sticks of butter (3 unsalted and 1 salted)
- 1 1/2 cups powdered sugar

Apricot Jam

Glaze
- 1/2 lbs. milk chocolate
- 4 tbsp. oil

Aluatul:
- using a mixer combine the sugar and the eggs until the mixture is foamy, add the honey, butter continuing mixing. Put the amoniac powder in a small cup and add 1 tbsp. vinegar, after the reaction takes place you add it to your egg mix. Add the milk.
- put the mixture in a non-stick pan with the flame on low
- mix continuously until it doubles in volume and it get to a slightly darker color
- remove the pan from the stove and pour it on top of the flour and mix it (use a stand up mixer for this) until the the dough is homogenious
- divide the dough in 4 equal parts and roll it out
- bake in on the back of a well greased (use butter not oil) cookie sheet at 350 degrees for 20 min

Pudding:
- put all of the ingredients in a bowl and wisk them together to avoid lumps
- bring to a boil mixing continuously
- cook on a low flame for 5 min
- take to the side and let it cool (when it starts forming a crust put 1 tbsp of butter on top)

Cream:
- mix the butter and the sugar until fluffy, then add the cooled pudding
- mix well

Lay one pastry sheet then 1/2 of the cream, then another pastry sheet, then 300 gr. of apricot jam, 1 more sheet, 1/2 of the cream and 1 more sheet.

To make the glaze melt the chocolate on a double boiler and add the oil, spread the melted chocolate on the top of the pastry.
